Brownies have always been one of those things I’ve struggled to make perfectly. I don’t know if this was just a fluke but the first time I’ve made Vegan Brownies and they have come out perfect. Gooey insides and chewy outsides. Super yummy and 100% VEGAN!
250g Plain Flour
350g Brown/Demerara Sugar
65g Cocoa Powder
1tsp Baking Powder
1tsp Vanilla Extract
250ml Coconut oil
100g Dark Chocolate Broken or Chocolate Chips
50g Roasted Soft Chestnuts
Preheat oven to 180° oven. 160° Fan Oven.
Combine all of the dry ingredients other than the chocolate and nuts. Give it a good stir.
Add all your liquid ingredients. Stir again.
Add your nuts and chocolate to the mix. Stir again.
When your brownie pan of your choosing is ready, pour in the mixture.
Cook for 35 – 45 minutes or longer depending on how well done you like your brownies. Check the consistency with a skewer.
Once cooked to your liking leave to cool completely on a wire rack.
These brownies are what Winter has arrived for you to eat. They are the ideal comfort food. The cinnamon and the nuts combo is divine.
