This is the recipe for a simple tomato-based vegan mashup. Tofu and Tomatoes are the main flavours in the dish. I would recommend adding some spice and lemon to your taste buds.
Ingredients (serves 2)
Rice of your choosing
Green beans, around 150g
2 cups spinach
Couple of handfuls of cashews
2tbsp Nutritional Yeast
Lemon juice to taste
Salt & pepper
Nice and easy this recipe. Marinate your tofu beforehand for a few hours with some olive oil, chilli, lemon juice and coriander.
Cook your rice. Add the beans and peas towards the end.
Chop and fry your mushrooms.
Pop everything together into your bowls and add your other ingredients and anything else you wish.
This would also make a fab base for a chilli or a curry if you added lentils or chickpeas.
