So recently I have found myself struggling to get beans in my diet. Generally, my diet is very healthy at the minute but I would like to get to the point that I’m having beans and berries every day as well as more greens so I roasted some chickpeas and I’m pleasantly surprised with how they turned out.
I don’t usually include nutritional information with recipes but depending on how many grams of chickpeas you eat it can greatly increase the calories so be careful with them. I decided 200 calories would be my limit for a good snack and it is just that, a good snack. You feel like you’re eating plenty of them and they are very healthy.
8 servings – 197 calories per 50g serving
2.2g fibre, 2.5g protein
1 tbsp olive oil
1-2 tsp liquid smoke
1tsp Smoked paprika
400g (1 can) of chickpeas
2tsp of parsley or other herbs of your choice. I also enjoy rosemary
pinch & pepper
Set oven to 180 fan 200 normal
Drain, rinse and dry the chickpeas thoroughly.
Add the olive oil and give them a good stir.
Place on a baking tray with parchment paper
Roast for 30-40 minutes until crisps and golden
Once roasted, add the other ingredients whilst still warm and mix well.
They keep well in an airtight container.
