I have a lovely summer lunchtime recipe for you today. This would also be perfect for a light meal for dinner as I don’t find this to be overly filling. It’s pretty darn tasty and healthy though. although I say not very filling…it does come to over 500 calories…..oops. Anyway, I love tacos 😀 They have a wonderful crunch. It’s just a shame the filling always falls out!
Ingredients (serves 2)
1 can Chickpeas mashed
1 large Avocado
6 Taco Shells
1tbsp Lime juice
1/2 tbsp Soy Sauce
1/2 tsp Olive Oil
Sprinkle of chilli flakes
Salt & Pepper
Salad leaves (optional)
Cucumber on the side (optional)
Mash your chickpeas with the avocado
Chop your onion and peel and grate your carrot.
Mix all this together with the rest of your ingredients in a bowl.
Serve up in your taco shells with salad leaves and some cucumber chunks on the side.
