Pea Pasta with Lemon and Walnut

Hello Beans,
Another pasta recipe! Yes, I know. I have an addiction. This is quite similar to the lemon pesto pasta with just a few variants on the ingredients. It’s very filling and very good for you. Lot’s of vitamins A, K and B. Plus, it only takes 15 minutes to make.

Ingredients (serves 2)

150g Pasta
100g Garden peas or petit pois
2 cups raw spinach
Lemon slices to serve

Juice of 1 small lemon
30g Walnuts
1tbsp Parsley
1/2 tbsp Rosemary
1tbsp Garlic powder or 1 garlic clove
1tsp Chilli flakes
1tbsp Chia Seeds
1tbsp Nutritional Yeast
3/8 cup of water
Salt & Pepper

Boil your pasta. Measure out your peas and pop them to one side for now. These will go into the pot with the pasta towards the end to warm up.

Gather your ingredients for your dressing and place them all in the blender. This includes the Walnuts, Chia Seeds, Garlic, Rosemary, Parsley, Nutritional yeast and Lemon juice.

Whizz it up good making sure to scrape the sides. Once it’s all mixed add your water and give it a good stir. Add your salt & Pepper and anything else you wish. I added chilli flakes for a little heat. Olive oil would also work well in this. You should be left with something like this.

Now. If you haven’t already added you peas to your pasta cooking on the stove. Once your pasta and peas and cooked drain and rinse. If you want a cold dish rinse with cold water. For a warm/hot dish rinse with boiled water, mix it with the sauce and warm up on the hot.

Final Step. Your spinach. I use raw washed spinach and place it on one side of the bowl and the pasta on the other. Like I said it’s a quick and easy recipe. Lemon is also good on the side to squeeze over the pasta and spinach. I also placed a couple of walnuts on top for extra crunch.

There you have it. Good hold or cold. Very versatile. You could use lime instead of lemon juice. Olive oil instead of water. Cashews instead of walnuts. Broccoli and mushrooms would also go well in this. Plenty of options to make it your own! Have fun with it guys.

Make sure to share your pictures with me! I love seeing your creations.

Thanks Beans!
