Today is a simple pesto recipe with the added boost of spinach. High in nutrients and it tastes wonderful! The yummy flavour of the basil and the spinach along with the other ingredients give it a slight onion flavour but it’s certainly not overpowering.
This would be a wonderful pasta dish to have with some toasted garlic bread.
1 block of Tofu (280g)
1 Green Pepper
2 tbsp Basil
6 tbsp Olive Oil or other oil of your choosing
2 medium cloves of Garlic
1 tbsp Hemp Seed (optional)
1 tbsp Nutritional Yeast/Nooch (optional)
Handful of pine nuts
Begin by roughly chopping all your pesto ingredients. Then, blend the pepper on its own to break it up before adding all the other ingredients.. – Start on a low speed then increase the speed to create a smooth pesto texture.
Keep the pasta to the side whilst you cook your pasta. When the pasta is nearly done toast your pine nuts in a dry pan – around 3 minutes until golden in colour.
Once the pasta is cooked, Drain and combine it with the sauce. Then heat it all up together.
Serve with the toasted pine nuts on top.
