Zesty Lemon and Kale Pasta

Hello, Beans,
I’m very excited for this edition of ‘Avocado Loves’. Today we have one of my favourites. Pasta! Now, anyone who knows me knows that I love pasta. As does my husband. The great thing about pasta is that it’s easy for a vegan because most pasta dishes I cooked before going vegan didn’t contain any none vegan items in the first place. I probably do a pasta recipe at least twice a week.

Ingredients (serves 2)

150g Spaghetti
1 Avocado
2 Garlic Cloves
2tbsp Lemon Juice
150g Kale
Salt & Pepper

I haven’t included specific measurements or a method for this recipe as it’s pretty straightforward. Just pasta and then the other ingredients with it. Plus I think it’s nice to add as much lemon, garlic etc as you prefer to your own tastes πŸ˜€
