Stewed Cauliflower in a Tomato Sauce

This recipe only takes ten minutes of prep and uses minimal ingredients and yet it tastes so good! It really is so simple to make and will change your opinion of this amazing ingredient. Did I mention, it’s also super low calorie at less than 300 calories per portion? It’s somewhat similar to a curry but tastes super yummy without any spice. Obviously, though spice is an optional extra with just a little pinch of chilli flakes. If you like this recipe then you should try the Jackfruit Pulled ‘Pork’, a delicious healthy comfort food. Or, maybe you want something sweeter? Try the Carrot Cake with Cream Cheese Frosting for a delicious…

    Creamy Tahini Dressing

This dressing is my go-to creamy dressing for all of my salads. It’s super quick and easy to make but it tastes so good. Minimal ingredients are used and it’s super healthy. It literally takes five minutes to make. It feels so much more luxurious than the effort that has gone into making it. A great recipe for those summer BBQ salads. It would also make a great dressing for various vegetable or potato dishes. You can also have some fun with this dressing. Sometimes we add 1 tsp of mustard for a little kick. Chilli also works great. Other times we play more with herbs and add plenty of parsley…

    Spinach Pecan Super Salad

This has become one of my favourite salad recipes. It can take a bit of time to prep depending on how you chop your ingredients but it’s worth it. This salad is a gift from the gods. The perfect combination of sweet, crunchy, acidic. It’s delicious and super healthy. Best of all, its such a beautiful salad. So many vibrant colours in one bowl. It’s full of nutritionally packed foods. Just look at that rainbow! You don’t feel like you’re ‘just eating a salad’. It’s a full-blown meal that leaves you satisfied. The Creamy Tahini dressing goes perfectly with his salad combination. You can find the recipe for the dressing here. If you’re still feeling…

    Tofu Meatballs

For days when you want a meat substitute but don’t want to buy processed foods full of chemicals or pay a large sum. These are perfect and are made simply from tofu, herbs, and spices. They’re slightly spicy but not overly, they have a nice meaty flavor and are super easy to make. Did I also mention they’re low calorie? At only 50 calories per ball if you make ten. If you would like to follow the recipe exactly with the spaghetti and sauce. I made it for two people. Ten Meatballs. 150g Spaghetti and for the sauce: 1 Tin Chopped tomatoes, 2 tbsp Tomato Puree, 1/2 tbsp Nutritional Yeast, 1/2 tbsp…

    Sweet & Spicy Chickpea Burgers

This recipe is both easy to make with minimal ingredients and makes some of the best Vegan burgers I’ve ever tasted. They’re so good and very filling thanks to the chickpeas and rice. The method couldn’t be easier. Blend the ingredients together in a blender and form into patties. Easy as that. The best thing about this recipe is that you can freeze some of the patties and cook them from frozen at a later date. This original recipe is by ‘Naturally Stephanie’ a beautiful, very athletic Vegan lady. If you don’t already know of her check her out on youtube here. She made these burgers in one of her videos and…

    ‘Chicken’ Tofu

Tofu is filling, healthy and a great substitute for meat or as a filler for meals such as Salads and Curries. This was an accidental miracle, I put together some Tofu for Lunch and it was amazing. It took me a while to replicate it but I think I’ve hit the nail on the head now. It’s a combination of sweet, chewy and has that ‘meaty’ taste without the cruelty involved. The Olive Oil I feel is a necessary addition to make this tasty dish but Coconut Oil would also work but without the extra flavour, unless you have to avoid the oil, it’s worth it as one serving of this…

    Savoury Mince

Savory mince is a simple, versatile comfort food. Perfect for evenings where you want something big and nutritious but don’t want to be standing in the kitchen. It’s the kind of recipe that feels like you’ve made a lot more effort than you have and it’s worth the extra time to make it perfect. The combination of Vegetables works perfectly in this recipe with the flavour of the Sweet Potatoes. It proves a slight but not overpowering sweetness which adds another layer to the flavours in this dish. Plus, all of the ingredients makes it look so pretty on the plate. If you like his recipe then you will also love…

Cheese & Tomato, Sweet Stuffed Pepper

Stuffed Bell Peppers are a great option for both Lunch and Dinners. They’re low in calories but depending on what you have them with can be healthy, nutritious and filling. This recipe uses a cheese and tomato inspired mix with a layer of sweetness that sweet potato provides. The rice in this recipe will keep you full and is super good for you, combined with the nutrients of the sweet potato and the delicious cheesy goodness on top, it’s a real treat. You can see the layers stuffed into the pepper in the picture above. The rice mix on the bottom, sweet potato in the middle and a cheese layer…

    Cheesy ‘Chicken’ Cottage Pie

I really like the combination of Tomatoes, Plant-Based Cheese, and Vegan Chicken in this Recipe. If you tried it without knowing it was Vegan you wouldn’t be able to tell a difference. It’s both cheesy and comforting. A perfect meal when you’ve had a long day at work or even just on a usual day, why not. It’s packed full of goodies to keep you full with an added nutritional value and best of all it makes great leftovers. This will soon become a family favorite that is worth the time to make. Jackfruit Pulled ‘Pork’

This is a delightful Vegan alternative to BBQ pulled pork recipe made with Jackfruit. If you don’t know what Jackfruit is. It grows in tropical areas of Southeast Asia, Brazil, and Africa with a consistency similar to chicken or pork. Similar to Tofu it doesn’t taste like a lot. That combined with the flaky texture makes it wonderful to use as a meat substitute and as an ingredient for BBQ pulled ‘pork’. Jackfruit contains no saturated fat or cholesterol and is low in calories. With 3g of fiber and 110mg of potassium this fruit packs a wonderful nutrient punch. This recipe is also very versatile, you could use it as a main meal in Buddha…
