Hope you’re all well. I have yet another pasta recipe for you guys. I love pasta 😀 This is another homemade pesto pasta. Broccoli and Walnut. Very filling to help avoid snacking through the day. Plenty of fibre and protein with 0 saturated fats so great if you’re watching your weight.
Nutritional information (per 1 serving)
Ingredients (Serves 1)
1tbsp hemp seeds
50g broccoli florets
1tbsp garlic granules or 1 clove
1 tbsp basil
1tbsp lemon juice
½ tbsp walnut oil
1tsp apple cider vinegar
Salt & Pepper
Cook your pasta. I’m sure that goes without saying 🙂 I cook my broccoli in the same pan with the pasta and just take it out with a slotted spoon when it’s done.
Measure out all your pesto ingredients into a blender and whizz it up.
Your broccoli should be thoroughly cooked now so drain it and add it to the blender. Whizz it up again.
Once it’s all whizzed add a little water from the pan the pasta is cooking in if you would like it a little less dry. You will be left with something like this.
Once your pasta is cooked. Drain it off. Rinse with hot water and mix with the pesto. This meal will be lukewarm when finished. Adjust accordingly if you would prefer to have it hot or cold.
