Today I started my morning with this Apple & Pecan Pie inspired Oatmeal. Oatmeal is a great way to start your morning. It will keep you full through the day and the added sweetness of the fruit are a healthy kick. Oh, and it’s super yummy.
50g Oats of your choice
1/2 cup of water
1/2 cup of plant milk
1 Medium Apple finely chopped
1 Handful of Pecans
2 tbsp Golden Syrup (Other syrups and brown sugar would also work)
1/3 tsp Cinnamon and some to sprinkle on top
Pinch of Nutmeg and Salt
1/4 Tbsp Butter/Margarine (I used Vitalife)
Add your apple, spices, salt, butter/margarine and Golden Syrup to the pan and cook on a medium to high heat until the apple is soft. Around 5 mins.
Add your water, milk and oats.
Cook until there’s hardly any water left. 5-10minutes. Then add your pecans and give it another minute.
Serve immediately with a drizzle of golden syrup or pop it in the fridge for overnight oats
