Tofu Meatballs

For days when you want a meat substitute but don’t want to buy processed foods full of chemicals or pay a large sum. These are perfect and are made simply from tofu, herbs, and spices. They’re slightly spicy but not overly, they have a nice meaty flavor and are super easy to make. Did I also mention they’re low calorie? At only 50 calories per ball if you make ten.

If you would like to follow the recipe exactly with the spaghetti and sauce. I made it for two people. Ten Meatballs. 150g Spaghetti and for the sauce: 1 Tin Chopped tomatoes, 2 tbsp Tomato Puree, 1/2 tbsp Nutritional Yeast, 1/2 tbsp Oregano, 1/2 tbsp Basil, 1/2 tsp Marmite, Salt & Pepper.

Ingredients

  • 280 g Block of firm Tofu Crumbled
  • 1 Diced Onion
  • 2 tbsp Liquid Smoke
  • 1 tbsp Nutritional Yeast
  • 1 tbsp Paprika
  • 1/2 tsp Tumeric Optional
  • Salt + Pepper to taste
  • 1 tbsp Oregano
  • 1 tbsp Parsley
  • 1/2 tsp Chilli Powder
  • 1/2 tsp Garlic Granules or 2 cloves
  • 3 tbsp Sriracha

For the Coating

  • 2 tbsp Corn Starch
  • 1 tbsp Nutritional Yeast

Instructions

  1. First, warm up your oven to 180C Fan. 200C Normal. Cover a tray with baking paper. Then fry your onion until softened and browning. 

  2. Add your crumbled Tofu to a bowl with the Onion and everything else. Give it a good stir. 

  3. Next, place the cornstarch and nutritional yeast coating on a board or in a bowl. 

  4. Mold your mixture into balls with your hands. To make ten, they should be a similar size to the head of a tbsp. 

  5. Roll each ball into the coating until completely covered and place on the baking paper. 

  6. Optional - Spray or cover each ball with a little oil to help them brown. 

  7. Place in the oven for 25-30 mins until beginning to brown. You will know when they're ready as they will hold there shape.

  8. When they're ready it's good to place them in a pan with your sauce and give them a gentle stir. 

  9. Serve immediately. Will also be good for leftovers the next day. We serve ours with a simple tomato sauce and spaghetti.
