Roasted Chickpeas

Chickpeas are wonderful. They make hummus, they’re great for curries and are also a pleasantly delicious snack that is also very filling, This recipe is a delicious mix of spice and a smoky flavor that will keep you wanting more. You will soon realize just how addictive these crunchy delights can be. The flavor of the liquid smoke gives them a pleasant enhanced flavor that mixes perfectly with the spicy paprika.

How about something sweet to have on the side. The recipe for my Chocolate Coconut Bars take only a short time to make and are very appetizing. Or, maybe you want something a little more moreish, in that case, you will love the Cookie Dough Peanut Bites, they’re both decent and dangerously addictive.

Roasted Chickpeas

Ingredients

  • 1/2 Tbsp Olive Oil
  • 1 Tsp Liquid Smoke
  • 1 tsp Smoked Paprika
  • 200 g of Chickpeas
  • 1 Tsp of Parsley or other herbs of your choice. I also enjoy rosemary
  • Pinch of Salt and Pepper

Instructions

  1. Set oven to 180 fan 200 normal
  2. Drain, rinse and dry the chickpeas thoroughly.
  3. Add the olive oil and give them a good stir.
  4. Place on a baking tray with parchment paper.

  5. Roast for 30-40 minutes until crisp and golden.
  6. Once roasted, add the other ingredients whilst still warm and mix well.
  7. Serve immediately. They lose the crunchiness if you leave them.
