If you want a Vegan version of Bounty Bars or just love the combination of chocolate and coconut then these bars are for you. Only 5 ingredients, super simple to make and certainly curb a chocolate or coconut craving. For something a bit more decadent you could coat them fully in chocolate if you wish and maybe even add a layer of peanut butter in between.

Chocolate Coconut Bars
- 220 g Desiccated coconut
- 400 ml Light Coconut Milk
- 1 tbsp Agave Syrup
- 2 tsp Vanilla Extract
- 50 g Dark Chocolate
Combine the Coconut Milk, Desiccated Coconut, Agave Syrup and Vanilla Extract in a bowl. Give it all a good mix together.
Then using a mould of your choice pat down the mixture into shapes. You could use anything you like to do this, cookie cutters, ice cube tray, chocolate moulds.
Freeze your bars for an hour.
Melt your chocolate and drizzle over the bites.
These keep in the fridge for a week or you can freeze them for a month and take each one out to defrost as required.
