Have you ever had those ruffles bars from the pound shops in the UK? They’re flavored coconut coated in Dark Chocolate. This is a super healthier version of those little beauties. The spinach in the mixture is what gives these bites the beautiful green color and what better way to do it than with such a nutrient-packed ingredient.
Dark chocolate, Coconut, and Mint. It’s a delicious combination whilst remaining quite light on the calories which makes them a great go to.

Mint Coconut Bites
- 160 ml Coconut Cream
- 10 g Spinach
- 1/2 Tsp Peppermint Extract
- 1 tbsp Golden Syrup
- 150 g Desiccated Coconut
- 100 g Dark Chocolate
- 2 Tbsp Coconut Oil
- 1 Tsp Vanilla Extract
Add your coconut cream and spinach to a blender. Blend until smooth.
Place this mixture into a bowl. Add the Peppermint Extract and Golden Syrup and give it a good whisk.
Add the desiccated coconut and stir it all together. The consistency you should be left with is easy to mould together into balls.
Roll the mixture into 20 balls and place in the freezer for 1 hour to set.
Combine the Dark Chocolate, Vanilla Extract and Coconut Oil. Place in the Microwave for 30-second intervals to melt.
Dip each ball into the mixture. Turn it over with a spoon to make sure it’s thoroughly coated and then place them on a board. The coconut oil makes the chocolate set pretty quick.
Once coated thoroughly, drizzle the rest of the chocolate over the top.
Place in the fridge to set and then repeat on the underside.
Keep in the fridge for a week or the freezer for 1 month.
