Cookie Dough Peanut Bites

Just a warning. These are dangerously addictive. There are 2/3 layers to this recipe but the 3rd is optional. Four layers if you count the coating of chocolate at the end. Despite the somewhat lengthy method and layers, you won’t regret making these.

Whoever decided to make cookie dough out of chickpeas is a genius. The sweetness of the dark chocolate combined with cookie dough, peanut butter and if you choose to use it Lotus biscuit spread. They’re like a cake pop without the cake.

Cookie Dough:

  • 400 g Tinned Chickpeas
  • 2 Tbsp Maple Syrup
  • 2 Tsp Vanilla Extract
  • 1/2 Tsp Cinnamon
  • 1 Tbsp Light brown sugar
  • 100 g Dark Chocolate chips
  • Plain flour
  • Pinch of Salt

Peanut butter layer:

  • 3 Tsp Peanut Butter
  • 10 Dates
  • ½ Tbsp Butter

Sweet treat layer (optional)

  • 1 Tbsp Lotus biscuit spread

Chocolate coating:

  • 180 g Dark Chocolate
  • 2 Tbsp Coconut Oil
