Mixed Pasta Salad

This is a great recipe for packed lunches as a lighter option during the day.  It would also be great for a picnic or as a dish at a BBQ. Full of flavor and quick to make. It’s also a great way to use up leftovers. The flavors are vibrant and satisfying.

You could also bulk this recipe up to add more calories. A sweet potato would work well or some extra veg. Lemon Juice would be an extra delicious flavor or Avocado to add creaminess and some healthy fats. Pasta is quite good at keeping you full for longer though which makes it a great choice for lower calorie options.

Ingredients

  • 150 g Pasta
  • 10 Cherry tomatoes
  • 100 g Spinach
  • 1 Grated Carrot
  • 1/2 Red Onion
  • 1 Tbsp Hemp Seeds
  • 1 Tbsp Nutritional Yeast
  • 1 Tbsp Parsley
  • 1 Tbsp Chive
  • Salt & Pepper
  • Vegan Mozzarella to sprinkle on top Optional

Instructions

  1. Chop all of your ingredients and place in a bowl. 

  2. Cook, then drain and rinse your pasta.

  3. Combine the pasta with the ingredients in your bowl and give it a good mix. 

  4. Serve immediately. Alternatively, use for lunches over several days or as a base for a main meal.
