You could also bulk this recipe up to add more calories. A sweet potato would work well or some extra veg. Lemon Juice would be an extra delicious flavor or Avocado to add creaminess and some healthy fats. Mixed Pasta Salad
- 150 g Pasta
- 10 Cherry tomatoes
- 100 g Spinach
- 1 Grated Carrot
- 1/2 Red Onion
- 1 Tbsp Hemp Seeds
- 1 Tbsp Nutritional Yeast
- 1 Tbsp Parsley
- 1 Tbsp Chive
- Salt & Pepper
- Vegan Mozzarella to sprinkle on top Optional
Chop all of your ingredients and place in a bowl.
Cook, then drain and rinse your pasta.
Combine the pasta with the ingredients in your bowl and give it a good mix.
Serve immediately. Alternatively, use for lunches over several days or as a base for a main meal.
