For any kale lovers out there, this is the recipe for you. Filling, healthy and very nutritious. The kale works wonderfully with the tartness of the Lemon Juice and the creaminess of an Avocado. Packed to the brim with goodness and with it being lower in calories it’s a great lunch option for a quick meal when you want something a little different.
Avocados are full of healthy fats, mix this with the lemon and kale and you will be a powering through the rest of your day at warp speed.

Lemon and Kale Spaghetti
- 150 g Spaghetti
- 1 Avocado
- 2 Garlic Cloves minced
- 2 tbsp Lemon Juice
- 150 g Kale
- Salt & Pepper
Cook your spaghetti.
While it’s cooking. Steam your kale and mash your avocado.
Once your kale is steamed. Add your Kale, Garlic, Lemon Juice and Oregano to a bowl and give it a good mix. Salt & Pepper to taste.
Add your Avocado and Spaghetti and mix again.
